Watermelon Gazpacho Cools Perfectly on Sizzling Summer Days

The summer heat is on and chilled gazpacho is a classic and easy way to soothe your overheated system.

Consider this unexpected combination of juicy watermelon and peak of season tomatoes as they blend with a few other simple ingredients to start off your next meal.

The results are delightfully unexpected, maybe even a little quirky.

We tasted this velvety smooth puree while dining at one of our favorite restaurants in Aspen a couple of weeks ago. Even the non- gazpacho fans loved this cooling puree at Pyramid Bistro upstairs at the Explore Bookstore.

This low calorie, super healthy, dairy free and vegan gazpacho is surprisingly filling and best made a day ahead.
