Use that Panini Maker for a Quick Summer Meal

If your panini maker is hiding in a far corner of your kitchen counter, summer is a good time to pull it forward and make virtually effortless, gooey grilled cheese.

For that taste of summer, we turned to Sincerely Brigitte’s Tomato/Olive sliced cheese. This creamy, eminently meltable cheese is seasoned with black and green olives, sun dried tomatoes and plenty of classically Italian green herbs and garlic.

For these easy to assemble panini, amp up that summery spirit by layering slices of sun- kissed field tomatoes, fresh basil and simply seasoned, paper thin slices of raw zucchini.

These panini are perfect for a quick summer meal alongside a crisp green salad with chopped mint from the garden. Want to extend summer into the chillier months? Try these panini in winter, with a light vegetable and bean soup and you’ll be tasting Italy all year long.
