Groundbreaking, eye opening, and palate pleasing… Shearwater Coffee Roasters is the FIRST and ONLY USDA certified organic coffee roaster in Fairfield County, CT and they have roasted up some delicious, unalloyed coffee.

 

I took a short drive to Trumbull, Connecticut, recently to visit this state of the art roaster and chat with Shearwater’s founder, Ed Freeman, who summed up the importance of eating and drinking organic: “It’s a way of life, not a product line.”

We couldn’t agree more.

They make every effort to ensure that their coffee beans, sourced from all over the world, including Guatemala, East Africa, and Indonesia to name a few, are completely free of any harmful pesticides or chemicals and never come in contact with non-organic beans.

Sustainability is also a big factor in everything they do.  Even their monster Diedrich IR-12 roaster is extremely energy efficient and uses considerably less fuel than other roasters.

Ed’s passion for roasting, which he described as an intricate science, is evident in all that Shearwater does. Written out in detail on a giant blackboard in chalk on his wall beside the roaster, you can see that he puts a lot of care and thought into the art of roasting.

Not only is the company committed to sustainability and the principles of selling high-quality, organic coffee, Shearwater is also dedicated to giving back. In fact, they are a big supporter of Wholesome Wave and a portion of all their sales is donated to the cause.

Need one more reason to love this local company? The small-batch artisan roaster is completely family run. Ed’s daughter, Leah, does the roasting and maintains the roaster space, while Ed’s wife, Wanda, manages all the finances.

They primarily sell wholesale to local restaurants and cafés, including Parallel Post in Trumbull, Aspetuck Blue Bird Inn, Steam Coffee Bar in Westport, and many more around the area. You can also visit the roaster for some tasting or artisan equipment shopping on Saturdays from 9am-5pm.
