Healthier Pasta Salad with Roasted Red Pepper Tehina

Imagine a 4th of July cookout, or any summer gathering for that matter, without pasta salad? Unthinkable!

If you’re like me, you steered clear of heat sensitive mayonnaise coated pasta many moons ago. So when The Nosher asked me for a summer pasta I got to work using two of my favorite ingredients: tehina (some spell it TEHINI) and sweet roasted peppers.

Be sure to follow the instructions and remember to coat the pasta just before serving it. Tehina thickens as it stands so if you toss it all together more than a few minutes before serving you won’t have the perfectly moist, summery flavors you want.
