Shop Local for this Sweet & Savory Carrot Mash

If you’ve seen the mounds of deep yellow, imperial purple and sunny orange carrots at your farmers’ market this autumn you may already be hooked on experimenting with these charming rainbow hued roots.

We love to contrast the naturally sweet flavors with savory additions by simply roasting  carrots with EVOO and spices. It’s a staple in our weeknight rotation.

But when Robin Selden sent us this recipe for Carrot and Ginger Mash with Oat and Toasted Pecan Crumble we immediately thought special occasion.

Think any dinner where a do-ahead casserole would serve you and your guests well. Sorry to mention Thanksgiving already, but this casserole would indeed, be a welcome and colorful addition to your holiday table. But any Friday night, Sunday eve or even brunch would be the perfect time, too.
