    • Hi Allison- Yes, you can freeze these latkes and then re-heat in a hot oven (about 375- 400 F). If you’re planning to do that, brown the latkes a little less than you normally would when you pan fry them. As far as doubling, you may need to add more eggs to hold the batter together but that only adds to the crispiness so go for it!
