Autumn Baking: Roasted Pumpkin & Ricotta Galette

Christine Cote, chef and owner of Huckleberries Artisan Pastries in CT, walks the seasonal baking route with conviction, fervor and plenty of butter. At my local farmers’ market she’s the go-to baker for handmade sweets and savories for the hardcore locavores among us.

Hankering for a berry pie in November?

You’ll never find it in Christine’s offerings. What you’ll find instead, is a finely tuned selection of handmade pies and tarts that celebrate what’s growing during any given week. When berry season is over, you won’t find a bit of berry anything until next summer.

Lucky for us, some baking ingredients are always available. Thank you chocolate, caramel and cinnamon.

Yes, there are cookies, too.

At this time of year and through Thanksgiving, you’ll find Apple Brown Butter Tarts, Pear Cranberry Butter Tarts, Vintage Apple Classic for the fruit lovers in your gang. If you’d rather head into the savory veggie driven zone, you’ll find Maple Parsnip Tart, Maple Sweet Potato Tart and enough other veggie laden treats to relieve just a bit of that guilt once you taste her buttery crusts.

For those who haven’t tried your hand at galette making yet, jump right in there. Galettes are meant to be free-form, irregular, slightly raggedy platforms that discourage perfection and welcome creativity.

About getting creative, Christine shared these favorite ingredient combos. Try them:

♥pears roasted with Madeira wine

♥apple and butternut squash anything

♥winter squashes with candied ginger

♥dates with manchego cheese.
